Crozes Hermitage, Domaine Aleofane

The vines are situated in the plane of Chassis, the vineyard is composed of 50 year old vines (the lieu-dit is les Pichères in Beaumont-Monteux) and visual selection of the most robust vineplants of Serine.

Hand harvested, destemmed, 20 day vinification, twice daily pump overs, manual cap punching.

After the cap (the skins top of the tank) was broken up, the solids were left in the wine for an extra 5 days following fermentation.

The wine was put directly into demi-muids (600 liter barrels) with 15% new oak barrels, and was aged in barrel for 12 months before bottling.
